Young farmers at the Cornucopia Project summer camp competed in the fourth annual salsa contest Wednesday morning at the Cornucopia Project farm at Route 202 and Vose Farm Road in Peterborough.
Six teams of young chefs used vegetables they helped grow to create salsa recipes from scratch. Ingredients included several varieties of tomatoes, garlic, peppers, herbs, green onions, onions and edible flowers, including calendula, for garnish.
Judging the contest were Matt Shea of Belletetes, Eli Rajaniemi of Shaw’s in Peterborough, Nancy Silva of Bar Harbor Bank, ConVal interim Superintendent Ann Forrest and Cornucopia Project founder Kin Schilling. Each of the six teams was granted a prize for a different category.
Jackson Cherien and Carter Baird won for best salsa overall.
